One that springs to mind is "Kill The shogun with Hwang Jan Lee where he plays a "white haired fox" in the early scenes and a thug in the final fight.

ODD COUPLE Sammo Hung & Lau Kar Wing play play young & old characters(they are different characters in the story)
THE TWIN DRAGONS Jackie Chan plays a pair of identical twins separated at birth.
KNOCKABOUT Yuen Miu plays a waiter & boatman.
I think Wu Ma plays a living human & a Jiang Shi in SPOOKY ENCOUNTERS though it not confirmed.
THE 36TH CHAMBER OF SHAOLIN Peter Chan plays the Abbot in charge of Staff Chamber as well as a Soldier & To Wing Leung plays both Monk & Gam Tin Chue plays a Magistrate & Civilian
RETURN TO THE 36TH CHAMBER Ho Bo Sing plays a worker at the dye factory & a Monk.
EXECUTIONERS OF SHAOLIN Cheung Chok Chow plays a villager & an official.
PROJECT A Paul Wong Kwan plays a Policeman & is the guy with ladder in the bike scene. Chan Chi Fai Coast Guard & Pirate, Lau Fong Sai Coast Guard & Policeman, Wan Seung Lam Mahjong Player & Thug.
HEART OF THE DRAGON Chow Gam Kong is at the SWAT training & Thug.
POLICE STORY Lau Shung Fung Cop & Thug.

I think there so many stunt guys who play many general background character & do general fighting/stunts but hard to remember or take in when watching.
